Do the Trustees know what's in the Trust? How hard is it for them to find out? Who does know what's in it?

The Trustees will not know what's in any given Trust. When the Trustees approve the initial minutes, they authorize the exchange of property as specified in Schedule A, real property, and Schedule B, personal property. The only thing in either schedule is one desk and one chair. You, as the purchaser of the right to manage a Trust, can exchange into the Trust whatever property you want AFTER the indenture is recorded and after you have the entire package, including the signed minutes. Only the Managing Directors will know what's in the Trust except for real property. Since real property has to be recorded and thus becomes a matter of public record, anyone who can search the records will be able to determine what real property the Trust has.
