Can I specify who the trustees will be? (This is a particularly important point since the contract is, in essence, giving ownership of my property to the Trustees. Thus, as suggested by the entity itself, this requires someone you "trust".)

You can specify the Trustees if you want. However, keep in mind that it is much easier to pierce a Trust if it can be shown that the Trust is really just a way to hide assets. Having Trustees that you do not know and are not related to makes this much harder to prove.
